When Shiva came home, the waking Ganesha choked him. Shiva believed he was dealing with a rival and cut off his head. Parvati was inconsolable. Servants were instructed to find a new head for the unfortunate, if necessary, from the first living creature they encountered. That turned out to be an elephant, so the torso of Ganesha is from the head of an elephant.
